Oatmeal Scotchie bar cookies

Cook Time: 25 minutes

Additional Time: 30 minutes

Total Time: 1 hour 10 minutes

Ingredients

  • 2-1/4 cups sifted flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, softened
  • 1-1/2 cups firmly packed brown sugar
  • 2 eggs
  • 1 teaspoon water
  • 1-1/2 cups quick oats, uncooked
  • 12 ounces butterscotch chips
  • 1/2 measuring teaspoon orange extract

Instructions

  1. Preheat oven to 375 degrees (F).
  2. In small bowl, combine flour, baking powder, baking soda, and salt; set aside.
  3. In large bowl, combine butter, brown sugar, eggs, and water; beat until creamy.
  4. Gradually add flour mixture.
  5. Stir in oats, butterscotch morsels and orange extract.
  6. Spread into greased 15- by 10- by 1-inch baking pan.
  7. Bake at 375 (F) for 20-25 minutes.
  8. Cool.
  9. Cut into thirty-five 2-inch squares.
